This is one of my favorite cake recipes and also my go to when I need a good quick cake.
I have tried numerous carrot cake recipes and either they were not moist or just not very good but this one is by far the best I have found.
This is a carrot cake with cream cheese frosting.
I hope you enjoy this as much as we do.
1 1/2 cups oil
2 cups sugar
2 cups plain flour
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder
1 1/2 cups grated carrots
1 cup broken pecans (optional)
Cream Cheese Frosting Ingredients:
1 stick margarine
1 box confectioner sugar
3 tsp. vanilla
1 (8oz) cream cheese
Preheat oven to 350 degrees F.
Grease pan (I prefer a bundt pan)
1- Mix oil(1 1/2 cup) and sugar(2 cups)
2- Beat (4) eggs well and then add to mixture
3- Add dry ingredients (2 cups flour, 2 tsp cinnamon, 2 tsp. baking powder) and blend well
4- Add carrots (1 1/2 cups) slowly
5- Add pecans (1 cup) blend well
Bake at 350 degrees for 1 hour or 50 minutes in a 9×13 inch pan
While the cake is cooling prepare your icing.
Mix all Frosting ingredients together and blend until smooth. It is best to get all cold ingredients to room temp while making the cake batter. They will mix better when they are not super cold. Slowly add the confectioner sugar so it doesn’t get everywhere.
When cake is cooled completely spoon, spread, or drizzle the icing/frosting on the cake and enjoy.
Let me know what you think of this simple carrot cake recipe.
