Grandma’s Banana Muffins

This banana muffin recipe comes from my mom. These are so delicious and they were one of my favorite things she would make growing up. She would make them 3 dozen at a time, freeze some, put others in a bag on the counter, store them in the fridge, and we were able to enjoy these muffins all the time.

This recipe yields 12 regular sized muffins, so do yourself a favor and double or triple it. You will thank me later. Go ahead and start by mixing your egg, milk, oil, and mashed bananas together. If you feel like your bananas aren’t mashed enough, I guarantee your mixer will finish mixing it the rest of the way.

Next  add your dry ingredients: flour, brown sugar, baking powder, and salt. Mix until it’s combined, but do not over mix it! Just don’t do it. Why? It actually makes your dough tough, ergo tough muffins, and nobody likes that.

After you’ve mixed your ingredients to perfection, you will add them into a greased muffin pan and cook at 400 degree oven for about 15-20 minutes.

You don’t have to add anything to it, but my kids love a little bit of butter on top, in between, generally all over. Butter makes everything taste better, but I promise you don’t need it with these. Pull them out of the oven and enjoy!

Ingredients

  • 1 egg
  • 1/3 cup milk
  • 1/2 cup oil
  • 1 cup mashed bananas
  • 2 cups flour
  • 2/3 cup brown sugar
  • 1 tbsp baking powder
  • 1 tsp salt

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Stir together egg, milk, oil, and bananas.
  • Add and stir remaining ingredients.
  • Bake for 15-20 minutes.
