Today I have for you guys a make-ahead and freeze, rolls recipe. With Thanksgiving and Christmas upon us this will help you plan your meals without the stress of making it all in one go. These rolls are the best rolls ever. I got this recipe from my friend, Melanie, while I was living in Texas many years ago. Once you make these rolls, I promise you they will become your all-time favorite.
First thing you’re going to do is mix in 2 cups of (warm) water with 2 tablespoons of yeast into a mixer of your choice. Allow it to sit for about 5-10 minutes until it gets bubbly.
Once we get that bubbly goodness, it’s time to add a bunch of ingredients. Don’t let it scare you off though! Give these rolls a try and I promise you they will be delicious. That being said, you will add your sugar, melted butter, salt, dry milk powder, all-purpose flour, and yes, mashed potatoes. Mashed potatoes are used in place of an egg and gives it such a nice texture. It makes it a total game changer.
Your rolls dough will be ready once it has pulled from the sides and is no longer sticking to them. Place your dough in a pre-oiled bowl and allow it to rise for 1-2 hours.
After the dough has risen, you will punch it down and begin forming it into rolls. I have a specific technique I like to use that is linked here in my step-by-step video of how to make these delicious rolls. Allow your rolls to rise for an additional 30 minutes.
Preheat your oven to 375 degrees Fahrenheit and cook your rolls for about 15-20 minutes. Spread a little butter overtop as soon as they come out of the oven and let them cool. After they’ve completed cooled, you can place them in a gallon ziplock bag and stick them in the freezer.
When you’re ready to eat them, be sure to pull them out the night before to ensure they are completely thawed and ready to serve!
Ingredients
- 2 cups warm water
- 2 tbsp yeast
- 1/3 cup sugar
- 1/3 cup butter melted
- 1/2 cup mashed potato
- 2 tsp salt
- 2/3 cup dry milk powder
- 5-6 cups flour
Instructions
- Mix water and yeast together. Let it rest for 5 minutes.
- Add sugar, butter, mashed potatoes, salt, dry milk powder, and flour. Mix until dough is no longer sticking to the sides.
- Let dough rise until doubled. Approximately, 30 minutes to an hour.
- Form dough into rolls and let rise another 30 minutes or until doubled.
- Bake at 375 degrees for 15-20 minutes.
