This hot and hearty soup mimics a beef stew but with a lot less hands on time. Enjoy with some crusty bread.
- 2 tbsp flour
- 1 tsp chili powder
- 1 pound beef stew meat
- 2 tbsp cooking oil
- 1 cup chopped carrots
- 1 cup chopped onion
- 1 bag frozen veggie mix
- 28 oz beef broth
- Season the beef with salt, pepper, chili powder, and sprinkle flour all over. Mix.
- Brown the beef in a skillet with the oil until seared.
- Place all ingredients, including seared beef, into the crockpot.
- Cover and cook on low for 10-12 hours or on high for 5-6 hours.
