Soft Molasses Ginger Cookies

Who doesn’t love good ginger cookies?  They’re the perfect holiday treat!  Like Christmas, or Hanukkah, …or Arbor day, or …Tuesday?

You’ll be looking for excuses to make this soft moist molasses cookies.

Soft Molasses Ginger Cookies

Ingredients

  • ¾ cup butter-flavored shortening
  • 1 cup white sugar
  • 1 egg
  • ¼ cup molasses
  • 2 cup all-purpose flour
  • 2 tsp baking soda
  • ½ tsp salt
  • 1 tsp ginger
  • 1 tsp ground cinnamon

Instructions

  • Preheat the oven to 350°.
  • Cream shortening, sugar, egg, and molasses together until fully combined. You can’t overmix this! Let it go for a few minutes.
  • In a separate bowl, add flour, baking soda, salt, ginger, and cinnamon. Stir until combined.
  • Combine dry ingredients with wet ingredients. Mix ingredients until fully combined. Set aside.
  • Add some sugar into a separate bowl. Roll dough into 1-2 TBSP sized balls, roll the balls in the sugar and place onto a cookie sheet.
  • Bake for 6-8 minutes. Wait until fully cooled and enjoy.

    I made these for my dad after randomly finding your recipe a week after he’d mentioned missing old fashioned molasses cookies and he LOVED them! I love how easy these were to make too. They may turn into my neighborhood Christmas gifts this year!
