Whole Grain Blackberry Spice Muffins

You ready to make some delicious, whole grain, blackberry spice muffins?Or as my son likes to call them, “Blue cupcakes.” These are so yummy and are a great treat to make when you’re trying to empty out your frozen berries in your freezer. Don’t lie. I know you have frozen berries that are just dying to be used in this recipe.

First, we are going to start by mixing all of our dry ingredients into a large mixing bowl. This means the flour, oats, brown sugar, baking powder, baking soda, salt, and apple pie spice. Make sure there are no clumps and set to the side.

In a medium size bowl, you are going to mix your milk, butter, vanilla, and egg. Just a quick tip, turn off the blender when you add your egg. Otherwise, you might end up with crunchy, egg-shell, muffins. I may or may not have ruined a cheesecake that way so turn the mixer off!

Add your wet ingredients to your dry ingredients and mix until just combined. Don’t over mix it though! It will actually make them tougher if they are over mixed.

If you’re lazy and want to end up with beautiful blue, blackberry muffins go ahead and mix your chopped berries in. If you want a more traditional muffin color with hints of the blackberry, fold your berries in.

Next you’ll scoop your blackberry muffin batter into your greased muffin pans. This recipe yields 12 regular muffins or 6 large muffins. Bake at 400 degrees Fahrenheit for about 15 minutes. Once they’ve cooked all the way through, pull them out, let them cool for 5 minutes, and store in a ziplock bag for a delicious “blue cupcake” all week long.

Ingredients

  • 2 cups flour
  • 1 cup oats
  • 1 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp apple pie spice
  • 1 cup milk
  • 3 tbsp melted butter
  • 1 tsp vanilla
  • 1 egg
  • 1 1/2 cups frozen, chopped blackberries

Instructions

  • Mix in a large bowl all the dry ingredients: flour, oats, brown sugar, baking powder, baking soda, salt, and apple pie spice.
  • Mix in a medium bowl all the wet ingredients: milk, melted butter, vanilla, and egg.
  • Add wet to dry ingredients and stir until just combined.
  • Add chopped berries and divide into muffin tins.
  • Bake at 400 degrees for 14-17 minutes and cool for 5 minutes.
